meal planning monday

How has it already been 2 weeks since I last blogged? We haven't been that busy. I am working on posting pictures from this weekend soon. We had a baby shower in The Woodlands hosted by my family and friends. It was so wonderful.

Anyway, this week is going to be busy. We have childbirth class one night and breastfeeding another night. These meals might not happen on the scheduled night, but they will happen at some point!

monday: sausage and pepper calzones and salad

tuesday: dinner provided by a sweet lady at church before our childbirth class

wednesday: Margherita Piadine with Lemon Chickpea Salad (new recipes)

thursday: childbirth class night, probably getting something quick before

friday: out to dinner with friends

saturday: burgers and sweet potato fries

After taking a few weeks off (John was out of town A LOT in January) I'm back and it feels good to be prepared for the week.

monday - Risotto with Italian Sausage, Caramelized Onions and Greens

tuesday - White Bean and Chicken Enchiladas

wednesday - church

thursday - I have bunco so John's on his own.

friday - We are having a Sunday School party at our house

saturday - Roasted Chicken and Veggies

sunday - leftovers

So I really had planned to have at least 2 posts go up between last week's menu planning Monday and today, but that didn't happen. So here's what we are eating this week. I'm excited to go to the grocery store again and eat real meals.

monday - Black Bean and Corn Topped Baked Potatoes and salad

tuesday - Italian Sausage, Spinach and White Bean Soup with ciabatta bread

wednesday - church activities so we will be eating leftovers

thursday - Tex-Mex Calzones and Black Bean Salad

friday - Lasagna, salad and garlic bread

saturday - we will probably go out or get take out

sunday - leftovers

this week will be all about eating what we have. Hosting 2 holidays in one month really puts a dent in the grocery budget so I will be getting creative with what we have.

monday: roasted brussels sprouts with pomegranates and vanilla butter and roasted cauliflower with pancetta and parmesan (we were supposed to make both of these this weekend when my parents were here, but we had too much food.)

tuesday: chicken squares and salad

wednesday: homemade pizza and salad

thursday: pasta with mushrooms, fennel and tomatoes and salad

friday: sunday school party

saturday: baked potato soup

monday: ham, mushroom and onion frittata with salad and bread (this is a made up recipe I will be using for leftovers)

tuesday: chicken squares and salad

wednesday: leftovers...clean out the fridge

thursday: my parents will be here so they are either bring something from houston on their way through or we will be getting food from somewhere here

friday: beef tenderloin, potato and fennel gratin and some other things

saturday: bacon wrapped pork loin and sides

menu planning monday (or lack thereof)

Check out my post below...a few preggo details that I've been asked!

I know you guys are all wondering about menu planning (read: I know you couldn't care less). So last week I didn't meal plan for the week. With Thanksgiving that week and rehearsals for the Christmas pageant at church it didn't make sense to do it. So we ate what we had.

This week I'm not going to either because here's what is going on...

Monday: leftovers after Christmas pageant dress rehearsal

Tuesday: I'll be out of town for work. John will probably eat a frozen pizza

Wednesday: I'll be out of town still. John's on his own again. (Don't worry, he has plenty of choices.)

Thursday: I'll be back but we have a Bunco Christmas party that night

Friday: Sunday School Christmas party

So as you can see, no point. And I'll just let you know now...no menu planning next week either. Every night we have performances of the Christmas pageant. December is CRAZY!

Last week things got a little crazy and off schedule. So one of last week's meals is going to carry over to this week. Our goal this week is to not go out to eat at all. With a crazy week ahead let's hope we can stick to that.

Happy November! Seriously...I am so excited this month is finally here!

I am so looking forward to Thanksgiving and decorating for Christmas at the end of the month.

Even though I am not participating in NaBloPoMo this month, I am going to start blogging more often. One thing that I have seen on several blogs that I am going to start this month is Menu Planning Monday.

Since we have finished the majority of our house renovation I have been cooking more frequently. (I know John is happy about that!) I've always been on and off about menu planning and I think this will {hopefully} keep me accountable for creating a menu and grocery shopping each week.

So without further ado, our menu this week.

Monday: Grilled Chicken with Creamed Spinach and Sweet Potatoes

Tuesday: Chicken Corn Chowder with Pepper Jack Corn Muffins

Wednesday: Chicken Quesadillas

Thursday: Chicken Florentine

Friday: Sunday School Party

Saturday: Rigatoni with Vegetable Bolognese

Sunday: Upward Celebration

Just realized there's a lot of chicken on that menu! Gonna change it up more next week...ha!
