24 starts again on November 23rd!! Season 7 was supposed to start back in January but due to the writer's strike they decided to wait. Last I heard they were waiting until January 2009 but I guess they couldn't wait either!! By looking at the picture you can see that Tony Almeida will be back...oh I can't wait! Baked Potato Soup

Sunday afternoon we had an extended choir rehearsal and after the rehearsal we had baked potatoes for dinner. John and I provided the potatoes and everyone else brought toppings. We ended up with about 10 very large leftover baked potatoes. I will be using them up this week and my first method was Baked Potato Soup. This is Lady's recipe. (My sister started calling my mom Lady several years ago and it's kind of stuck. Now when you see Lady here you'll know where the recipe came from!!)

Oh the bacon...and see the little bits of cheesy goodness.
Baked Potato Soup4 large potaotes
2/3 cup butter
2/3 cup flour
1 1/2 quarts milk (plus extra to thin out at the end if needed)
salt and pepper
4 green onions, chopped
1 cup sour cream
2 cups crumbled bacon
8 ounces sharped cheddar cheese, grated

Bake potatoes. Melt butter in a medium saucepan. Slowly blend in flour with a wire whisk until blended. Gradually add milk to the butter-flour mixture whisking constantly. Whisk in salt and pepper and simmer over low heat stirring constantly. Cut potatoes in half, scoop out the the insides and set aside. Chop 1/2 of the potato peels and discard the remaining. When the milk mixture is very hot whisk in the potatoes. Add the green onions and potatoe peels. Whisk well and add the sour cream and bacon. Add the cheese a little until melted. Serve and enjoy. It is goodness! Oh and if it is a little too thick, add milk to thin it out.

Rock the Vote

Rock the Vote! This is a very important election. You already know that though. Exercise your rights as an American and get out there and vote. I had a conversation with someone the other day that bothered me. This person said that they weren't voting because their sibling was voting for the opposite candidate. They both decided that neither of them vote because they would just cancel each other out if they did. Don't think like this! Exercise your right and rock the vote!

Dump Cake (Dumb Cake)

One of my co-workers had a birthday this week and since she is diabetic I thought I'd make a low-sugar dump cake. I really could not tell a difference and we served this with sugar free Cool Whip. This is not a difficult cake. When I was telling another co-worker what this cake was called he thought I said "Dumb Cake." It really could be called that also. And I promise to make more real baking. I used "light" ingredients and honestly you couldn't tell a difference. My co-workers loved it!

Dump Cake
1 can cherry pie filling (I used the light/low sugar version)
1 can crushed pineapple
1 box yellow cake mix (I used the reduced calorie/sugar)
1 ½ sticks butter (I used ¾ cup light butter)

Dump cherry pie filling and crushed pineapple into 9x13 baking dish. Stir together. Sprinkle cake mix over the top of the fruit. Slice butter and distribute over the surface of the cake mix. Bake at 350 degrees for 45 minutes to 1 hour. Serve with freshly whipped cream or Cool Whip.

Fall Back!

I love the end of daylight savings! I love looking at the clock on a Saturday night and it reads "9:05" and I can think to myself, "it's really 8:05!" That extra hour of sleep was definitely needed this weekend.

Baylor Homecoming was this weekend. It was very different for John and I this year. Because I work at Baylor and John is still in grad school Homecoming just isn't as exciting as it would be if were a little more disconnected from Baylor. Don't get me wrong..I love my job and I love that John is in school and we can meet on campus for lunch but Homecoming feels different. This year I worked 2 out of 4 of the Pigskin Revue shows. The Thursday night Club Night and the late (10:30) show on Friday night. Then Saturday morning I volunteered John and I to pass out programs during the parade. (If you saw us I'm sure we looked ridiculous.) It was pretty much power walking/running for 2 1/2 miles while we chased a pick up truck with programs in the back. Definitely not how we've done the parade before but it was fun and our work out for the day. Needless to say we were exhausted yesterday.

So that extra hour of sleep was beautiful.

Lindsay's Kitchen

I love to cook. Anyone who knows me knows that. Baking too. I love the freedom that comes with cooking. I almost always adjust a recipe though. Recipes, to me, are ideas and then I run from there. However, baking is a science. We all know that. You can't adjust baking recipes unless you exchange semisweet chocolate chips for milk chocolate chips in a cookie. In this blog you will find me sharing my favorite recipes. The ones my mom made for us growing up. And of course the new ones I find along the way. My hope is to share my failures and successes.
