bad blogger

Seriously y'all! I win the Bad Blogger of the Year Award! I have totally neglected my little blog and honestly, don't feel an ounce of guilt.

Okay so now that I've admitted that, I do feel a little guilty. Oh the shame.

I would really love to do a bona fide post with pictures and a great story but no time now.

I'll leave you with this though...We spent the weekend buying lots of furniture. We are getting so close to being finished furnishing our home.

I'll share the pictures soon. But I'm not going to define what soon means.

We are having a garage sale on Saturday so that is going to be my priority this week.

And I have a doozie of a story to tell you all about an experience we had in Austin this weekend with an old lady driver. It's absolutely nuts!

In the meantime, happy fall y'all and enjoy your cooler temps. Even in South Texas we are enjoying some cool evenings!

Late Night Target Runs

My lovely sister came in town last weekend. We had a BLAST! Her first night here we went to Target to get several things for the house. One of those were new lamps for our bedroom...


Here is Whit trying on our lampshades.

We got to Target around 8:00 and 8 minutes before they closed we were checking out with a cart-full of stuff. Plus 2 barstools.


What you see...a new duvet for our bed, a hamper, 2 pillows for our armless chairs in the formal living room, 2 lampshades, (2 lamps are there but you can't see them), 2 pillows for our bed - they look sort of purple in the picture but they are gray, 2 sets of sheets and some Neosporin.

I'll share the rest of the weekend later. We got a lot done on the house so you get to look forward to seeing pictures of new master bedroom bedding, new light fixtures (inside and out) and new tvs!

Things are finally starting to come together but we still need several things.

Do share your favorite places to find rugs and furniture...PLEASE! I've exhausted every store and website I know of to find chairs for our family room.

White Bean and Chicken Enchiladas

Living in South Texas has some major advantages. We are close to the coast and have awesome Mexican food. That's really all I can think of right now. Hurricanes and humid weather are really blocking my brain from thinking of anything else.

But back to the Mexican food. It's amazing. We do not have a single chain Mexican food restaurant where we live. They are all locally owned and so good. There is something I love about each one. However, the calories that come with delicious and authentic Mexican food are not favorable.

I found this recipe earlier this summer and knew that I had to make them. And they turned out to be delicious. We loved them and did not mind the leftovers.

Chicken and White Bean Enchiladas

White Bean and Chicken Enchiladas

Chicken and White Bean Filling:
1 tsp olive oil
1/4 cup minced sweet onion
2 cloves garlic, minced
1 can (4.5 oz) chopped green chiles
15.5 oz can white beans, rinsed and drained
8 oz cooked shredded chicken breast
1/3 cup water
1 chicken bullion
1 teaspoon cumin

Green Chile Enchilada Sauce:
1 teaspoon butter
1/2 cup chopped sweet onion
2 tablespoons flour
1 cup fat free chicken broth
7 oz can chopped green chiles
2 jalapeƱos, chopped (I used jarred)
1/2 cup light sour cream
3/4 cup reduced fat Mexican cheese
8 medium tortillas
chopped fresh cilantro, green onions and tomatoes

Preheat oven to 375 degrees.

For the Filling:
In a medium pan, heat olive oil on low. Add onions, garlic and saute until soft, about 2-3 minutes. Add green chiles, beans, water, bullion, and cumin. Mix well and cover. Simmer on low 15 minutes. Remove cover, add chicken and cook an additional 5 minutes, or until it thickens and liquid boils down. Set aside.

Green Chile Enchilada Sauce:
In a large nonstick pan, melt the butter over medium heat. Add onion and cook, stirring occasionally, until the onion softens and starts to turn translucent, about 3-4 minutes. Add flour and stir well. Cook for 1 minute, stirring constantly. Slowly whisk in the chicken broth. Whisk until the sauce becomes smooth. Cook over medium heat until the sauce boils and thickens, about 4-5 minutes. Add green chiles, jalapeƱos, and salt to tatse. Cook another minute then remove from the heat. Stir in the sour cream.

Spread about 1/4 cup of the enchilada sauce on the bottom of a 9x13 baking dish. Fill each tortilla with 1/3 cup of the chicken/white bean filling. Roll the tortillas and place seam side down in the prepared baking dish. Continue filling remainder of the tortillas.

Pour the enchilada sauce over the top of the enchiladas. Top with cheese. Cover with foil and bake 20-30 minutes, until the enchiladas are hot and the cheese is melted. Remove from oven and top with fresh cilantro, green onions and diced tomatoes.

I am in Abilene this week for work. I brought my computer and had plans to get some blogging done.

Well.....I forgot to upload pictures from my camera. And everything I wanted to share won't be near as exciting without pictures.

So, here I am {again} telling you that I will share pictures of all of our home improvements soon.

I have our new {to us} front door to share, the finished beautiful hardwood floors, and our simplified backyard.

I know there is more but that is all I can think of right now.

where in the world is Lindsay?

I realize it has been over 2 weeks since I posted a recipe here. Life has been crazy and I haven't been in "Lindsay's Kitchen" all that much.

I started a new job. Just finished my 2nd week. This job is beyond PERFECT for me. I love it.

We installed new hardwood floors in our house. Ourselves. The prep work took forever, therefore keeping me from cooking too much.

I have a few recipes to share soon. You'll see them start popping up next week.
